Enjoy these delicious chicken breasts stuffed with herb and cheese that are ready in less than an hour – perfect for a dinner.

Ingredients

boneless skinless chicken breasts (1 lb)

oz feta cheese, crumbled (1/2 cup)
1/4
cup chopped fresh parsley

teaspoons chopped fresh or 1/4 teaspoon dried oregano leaves

tablespoons olive or vegetable oil
2
cans (14.5 oz each) diced tomatoes with Italian-style herbs, undrained
1/4
cup sliced ripe olives
4
teaspoons cornstarch

Directions

  • 1 Heat oven to 350°F. With sharp knife, cut 3-inch slit in meaty side of each chicken breast to form pocket.
  • 2 In small bowl, mix cheese, parsley, oregano and oil. Gently spoon 1/4 of mixture into each pocket. Place chicken in ungreased 13x9-inch (3-quart) glass baking dish.
  • 3 In medium bowl, mix remaining ingredients; pour over chicken.
  • 4 Bake 35 to 40 minutes or until juice of chicken is clear when center of thickest part is cut (170°F).
Tips  

Serve these chicken breasts with mashed potatoes or egg noodles to use every bit of the tasty sauce.
