Ingredients

  • 2  tablespoons sugar
  • 1/3  cup oil
  • 1/4  cup orange juice
  • 2  tablespoons vinegar
  • SALAD
  • 1  (20-oz.) can pineapple chunks, drained, or 1 fresh pineapple, cut into chunks
  • 3  oranges, sectioned
  • 3  bananas, sliced diagonally
  • 1  jicama, peeled, sliced*
  • Romaine lettuce
  • 1/3  to 1/2 cup chopped peanuts
  • Seeds of 1 pomegranate, if desired

Directions

  1. In small jar with tight-fitting lid, combine dressing ingredients; shake well. In large bowl, combine pineapple, oranges, bananas and jicama. Pour dressingover fruit; toss gently to combine. Place fruit in lettuce-lined bowl;sprinkle with peanuts and pomegranate seeds.
