Homemade Coconut Curry Croutons

Big hunks of sourdough bread are coated here in a savory coconut curry butter, then toasted until golden brown and perfect. Serve over Progresso™ Lentil Soup for the ultimate treat.

Ingredients

  • 1/2 loaf hearty, stale sourdough bread
  • 4 tablespoons butter, melted
  • 1/2 teaspoon curry
  • 1/4 teaspoon onion salt
  • Pinch cinnamon and cardamon
  • 1 teaspoon honey
  • 2 tablespoons finely shredded coconut

Steps

  • 1
    Slice loaf into thick cubes.
  • 2
    Mix together melted butter, spices, and honey.
  • 3
    Drizzle butter over the top of your cubed bread.
  • 4
    Sprinkle with coconut.
  • 5
    Place on a greased baking sheet and bake in an oven preheated to 425°F, until golden brown (about 10 minutes).

    HOW TO USE YOUR CROUTONS: Serve over a can of Progresso™ Lentil Soup. Garnish with a mint and plain yogurt, if desired.
