A stress free dinner that can be ready in about an hour. Enjoy this sweet and sour chicken with corn for dinner.

Ingredients

GLAZE

2
tablespoons honey
2
tablespoons Dijon mustard
1
tablespoon olive oil
1/2
teaspoon garlic powder
1/2
teaspoon peppered seasoned salt

CHICKEN AND CORN

4
ears frozen corn-on-the-cob
3
to 3 1/2 lb. cut-up frying chicken

Directions

  • 1 Heat oven to 400°F. In small bowl, combine all glaze ingredients; mix well. Brush corn and chicken with glaze; set corn aside. Arrange chicken in ungreased shallow roasting pan.
  • 2 Bake chicken at 400°F. for 15 minutes. Add corn to roasting pan; bake an additional 30 to 35 minutes or until chicken is fork-tender and juices run clear, and corn is tender.
Tips

Substitute melted apricot or peach preserves for the honey. Like the honey, preserves help promote browning, giving the chicken a delicately sweet, crisp skin.
