Steam forms the hollow in the middle of pita breads, giving them their American name, "pocket bread."

Ingredients

1/4
cup fat-free mayonnaise
1
tablespoon Dijon mustard
1
tablespoon honey
1/4
teaspoon salt
2
cups chopped cooked turkey or chicken breast
2/3
cup chopped celery
2
(6 to 8-inch) pita (pocket) breads
1/4
cup slivered almonds, toasted*

Directions

  • 1 In medium bowl, combine mayonnaise, mustard, honey and salt; blend well. Add turkey and celery; stir just until combined.
  • 2 Cut each pita bread in half. Gently separate bread halves to form pockets. Fill bread halves with turkey mixture. Top each sandwich with 1 tablespoon almonds.
Tips

* To toast almonds, spread on cookie sheet; bake at 350°F. for 5 to 7 minutes or until light golden brown, stirring occasionally.
