Easy homemade mashed potatoes are ready in 30 minutes - a quick and delicious side dish.

Ingredients

lb Yukon Gold potatoes, peeled, cut into 3/4-inch cubes
1/4
cup butter, softened
2/3
cup half-and-half, warmed
4 1/2
teaspoons prepared horseradish

teaspoon salt

teaspoon stone-ground mustard

teaspoon freshly ground pepper
3
green onions, thinly sliced, if desired

Directions

  • 1 In 2-quart saucepan, place potatoes and enough water to cover. Heat to boiling; boil uncovered 15 minutes or until tender. Drain; return to saucepan.
  • 2 Add remaining ingredients except onions; mash with potato masher to desired consistency. Sprinkle with onions.
Tips  

Peel and cut the potatoes the night before. Store them in a bowl of water in the refrigerator.
