Hot Spinach Con Queso Dip

A creamy and melty cheese dip that’s packed with flavor!

Ingredients

jalapeño pepper
1/2
sweet onion
1
tablespoon butter
4
ounces cream cheese
8
ounces pepper jack cheese
1/2
cup milk
4
ounces diced pimientos
5
ounces frozen chopped spinach
1
teaspoon salt

Directions

  • 1 Heat a medium-size skillet over medium heat.
  • 2 While the skillet is heating, cut the jalapeno in half lengthwise. To keep things tame, remove the membranes and seeds, using a spoon to scrape them out. If you’d like the dip to be extra spicy, leave the seeds and membranes intact.
  • 3 Dice the peppers and onion.
  • 4 Add the butter to the skillet and let melt.
  • 5 Stir in the peppers and onions and cook for 3-4 minutes or until softened.
  • 6 Reduce the heat to low and add the cream cheese. Stir until it starts to soften and melt.
  • 7 Stir in the pepper jack cheese and continue stirring over low heat until it’s mostly melted.
  • 8 Add the milk and stir until smooth and creamy.
  • 9 While the cheese is melting, heat the spinach in the microwave according to package directions. Drain well.
  • 10 Stir the spinach, pimentos, and salt into the melted cheese.
  • 11 Serve with sliced bread, tortilla chips, or fresh vegetables.

Party dips need a pick me up? This hot spinach dip has got you covered. 

Things are getting spicy up in here! Just the way I like it.

Well, okay, so actually I’m kind of a wimp. I can handle the most spice out of anyone in my house though, and it makes me feel very tough. At least, I feel tough until I'm around other people slathering their food in sriracha and talking about eating habanero peppers as a snack. Then I cry like a baby. 

But! Today I have an ultra cheesy dip for you that will totally be the star of the next football game. I mean, we're all watching those games for the food, right?

Let’s do this!

We’re going straight for the hot stuff. Jalapeno peppers. You can either dice ‘em right up and leave the seeds in, or you can be a wimp like me and scrape the seeds out with a spoon.

Dice the pepper and half an onion. It’s okay to cry. Let it all out, my friend!

Now, we’re going to cook those peppers and onions until they’re just getting soft. Then we’ll toss in a big blob of cream cheese. It’ll look kind of freaky, but all the best things do!

You’re going to need some freshly shredded pepper jack cheese for this. Trust me on that.

Once that cream cheese has melted down a bit, add in your pepper jack. Lots and lots of pepper jack. Stir that around until it gets a little gooey.

Pour in some milk and keep stirring. Now you see where we’re headed, right? Pure melty cheese heaven.

Toss in your spinach. Do it for your health, okay? And don’t forget the pimentos.

Now, we’re all done! You can either dive in face first or you can pour it all in a slow cooker set to warm to keep it piping hot for a party.

I like to serve this with sliced French bread, but tortilla chips, Hawaiian rolls, and fresh veggies would be pretty rad, too.
