A new twist on the ever-popular spinach dip, this recipe is made in the microwave and served hot.

Ingredients

(9-oz.) pkg. frozen chopped spinach, thawed, squeezed to drain, chopped

(8-oz.) pkg. light cream cheese (Neufchatel), softened (not tub variety)

cup shredded carrots
1/2
cup sour cream
1/8
teaspoon onion powder
1/2
teaspoon dried dill weed

(2-oz.) jar sliced pimientos, drained

Directions

  • 1 In 1-quart microwave-safe casserole, combine all ingredients; mix well. Cover with microwave-safe waxed paper or plastic wrap.
  • 2 Microwave on HIGH for 3 to 5 minutes or until hot, stirring twice during cooking. Serve immediately with crackers and fresh vegetable dippers.
Tips  

To make ahead, prepare, cover and refrigerate up to 3 hours; microwave as directed.
