I Want S'more Cake

Ingredients

Cake

  • 1 box Betty Crocker™ Super Moist™ Cake Mix Devil's Food
  • Water, vegetable oil and eggs called for on cake mix box
  • 3 cups Golden Grahams™ Cereal
  • 1 jar (8 oz) marshmallow creme

Frosting

  • 1/2 cup unsalted butter, chopped into cubes
  • 3 oz unsweetened chocolate, chopped finely
  • 4 cups powdered sugar
  • 1/2 teaspoon vanilla
  • 1/2 cup milk

    Prepare the cake mix according to package directions for two round cakes.

    To prepare the frosting, mix unsweetened chocolate and butter in a medium bowl.

    In a small saucepan, heat the milk over medium high heat until it comes to a boil. Pour boiling milk over chocolate and butter. Let sit for five minutes.

    Stir chocolate, milk and butter mixture until smooth. Using an electric mixer, add one cup of powdered sugar and beat on low.

    Add vanilla and a second cup of powdered sugar. Continue to beat on low. Add remaining two cups of powdered sugar, one cup at a time.

    Once all powdered sugar is added, beat mixture on medium speed until frosting is smooth and spreadable. Set aside.

    Allow cake to cool. Level off the top of one of the cakes and using half of the frosting, frost only the top. Save the remaining frosting for the second layer of the cake.

    Take the second cake layer and cut an approximate 4-5 inch diameter hole in the center of the cake. Remove the cake circle and set aside. Place the cake ring on top of frosted cake layer.

    Fill inside the cake ring with Golden Grahams™ cereal and pack tightly. Leave about 1 inch of space from the top of the cake.

    Take the cake middle circle piece and cut 1 inch off the thickness of the cake and place on top of the cereal to fill the ring. Frost the top of the cake only, not the sides, with remaining frosting.

    Heat the marshmallow creme slightly in the microwave and pour on the top of the cake. Allow it to spread out.

    To toast the marshmallow top, use a culinary torch. If you do not have a culinary torch, just skip that part.

    The cake mix can be prepared a day ahead but you will want to frost, finish and eat on the same day.

  • I only like one thing about camping – S’mores. Camping was the only time growing up that we ever got them. Maybe because my mother was opposed to the idea of setting up a bonfire in the living room. All I know is that for something so simple, I sure did love them. Still do to this day. Since I still can’t make a bonfire in my home, I had to find alternatives like this I Want S’mores Cake. All of the flavors are there - chocolate, grahams and marshmallows (toasted!). It’s in a way just as messy, but that’s half the fun. And you still get to (safely) set things on fire. All of that is a win for me! The cake can be prepared a day ahead of time. But once you add the frosting, cereal, marshmallow creme, you will need to eat the cake that day - so keep that in mind. A spin on a fave camping treat without even having to haul out a sleeping bag.
