Enjoy the great taste of tuna casserole in a delicious pie. The creamy surprise comes from tiny cubes of cream cheese.

Ingredients

cup shredded process sharp American cheese (4 ounces)
1/3
cup frozen green peas, rinsed and drained
1/4
cup sliced green onion
1
can (5 oz) tuna, well drained
1
jar (2 oz) diced pimientos, drained

package (3 oz) cream cheese, cut into 1/4-inch cubes
3/4
cup Original Bisquick™ mix
1
cup milk
3
eggs
1/8
teaspoon ground nutmeg

Directions

  • 1 Heat oven to 400ºF. Grease bottom and side of 9-inch pie plate.
  • 2 In pie plate, mix American cheese, peas, onions, tuna and pimientos. Top with cream cheese cubes. Stir together remaining ingredients with fork until blended. Pour into pie plate.
  • 3 Bake 30 to 35 minutes or until knife inserted in center comes clean (some cheese may adhere to knife). Cool 5 minutes.
Tips  

Pimientos are red peppers that grow very much like the more common green bell pepper. These versatile peppers are of the sweet (versus hot) variety. They are commonly sold in jars, stuffed in olives and dried and ground to make paprika.

Impossibly easy lunch! Enjoy this pie served with sliced apples or tomatoes and a small salad for a light, refreshing meal.

Want to dress up this pie for a special night? Serve it with a glass of red wine and a side of sliced apples and toasted chopped walnuts drizzled with raspberry vinaigrette.

Use a cup of chopped cooked chicken or turkey instead of the tuna, if you’d prefer.
