Similar to Russian Cream, this light mousse makes a refreshing change from heavy holiday desserts.

Ingredients

1
cup skim milk
1
envelope unflavored gelatin
1/3
cup sugar
2
tablespoons green crème de menthe liqueur, or 1/4 teaspoon peppermint extract plus 2 tablespoons water*
2
cups frozen light whipped topping, thawed
2
oz. white baking bar, grated or chopped, or 1/3 cup white vanilla chips, chopped

Directions

  • 1 Place 1/4 cup of the milk in small saucepan; sprinkle gelatin over milk. Let stand at room temperature for 5 minutes to soften.
  • 2 Place saucepan over low heat; stir until gelatin is dissolved. Add sugar; stir until dissolved.
  • 3 In medium bowl, combine gelatin mixture, remaining 3/4 cup milk and creme de menthe; blend well. If necessary, refrigerate 5 to 10 minutes or until soft-set.
  • 4 Fold whipped topping into gelatin mixture. Divide mixture evenly into six 6-oz. custard cups or dessert dishes. Serve immediately or refrigerate until serving time. Just before serving, sprinkle tops with grated white baking bar.
Tips

* If using extract rather than creme de menthe, add 2 drops green food color with whipped topping.
