Lamb and potatoes provide a simple addition to a no-fuss slow-cooked stew. Perfect if you love Irish cuisine.

Ingredients

lb. lean lamb stew meat

medium potatoes (2 lb.), cut into 1/2-inch slices

medium onions, sliced

teaspoon salt
1/4
teaspoon pepper

teaspoon dried thyme leaves

(14-oz.) can beef broth
Chopped fresh parsley, if desired

Directions

  • 1 In 3 1/2- to 6-quart slow cooker, layer half each of the lamb, potatoes and onions. Sprinkle with half each of the salt, pepper and thyme. Repeat layers and sprinkle with remaining seasonings. Pour broth over top.
  • 2 Cover; cook on low setting for 8 to 10 hours or on high setting for 3 to 5 hours. Sprinkle individual servings of stew with parsley.
Tips  

If your family doesn't care for the flavor of lamb, you can substitute 2 pounds of lean beef stew meat.
