Irish-Style Dirt Cake

As prepared by Cheeky Kitchen

What if you took smooth white chocolate, snappy Bailey's Irish Cream, beat them together, then topped them with Lucky Charms? Why, you'd be about as lucky as anyone.

Good news! This year, your St. Patty's Day is going to go from blah to blarney-licious with this snappy dessert that won't just give you a bit o' luck, it'll give you a big kiss o' Irish goodness, as well!

The base of this Irish Dirt Cake is a whippy pudding, made with Yoplait vanilla yogurt, instant pudding mix, Bailey's Irish Cream, melted white chocolate, and whipped topping. All of those ingredients combine to make a concoction more beautiful than all the potato fields in Ireland.

Irish Cream Layer

Traditional Dirt Cake calls for crushed chocolate cookies. But we're not about cookies, here, we're about leprechauns! So our version calls for Lucky Charms. The combination of sweet & marshmallowy Lucky Charms with the spiked white chocolate pudding it to die for good!

Irish Style Dirt Cake

Ingredients

2
(6 ounce) cartons Yoplait French Vanilla Yogurt
1
(1 ounce) packet sugar-free white chocolate pudding
1/2
cup (or a 100 ml bottle) Bailey's Irish Cream liqueur (if making this family style, just use 1/4 cup of milk instead)
8
ounces extra-creamy whipped topping
1
cup white chocolate chips, melted
1 1/2
cups Lucky Charms

Directions

  • 1 In a stand mixer, beat together the yogurt, pudding mix, and Irish Cream until whippy.
  • 2 Add approximately 6 ounces of the whipped topping (you just need to save about 1 cup of the whipped topping to finish off the tops of your dirt cakes) and beat until the mixture is smooth.
  • 3 In a small bowl, melt the white chocolate chips in the microwave in 30-second bursts, until melted.
  • 4 With your electric mixer turned on, slowly pour the melted chocolate chips into your creamy mixture until well-beaten. Tint with green food coloring, if desired.
  • 5 Spoon several tablespoons of the mixture into mini trifle cups, top with Lucky Charms, more of the Irish Cream mixture, a thin layer of whipped topping, then sprinkle with Lucky Charms to finish it all off.
  • 6 Serve immediately for best results! Enjoy!
