Ingredients

  • 3 lb. beef roast
  • 1 package zesty italian dry dressing mix
  • 1 can (15 oz) beef broth
  • 1 jar (6 oz) pepperoncinis with juice

Steps

    Add all of the ingredients to a slow cooker and cook on low for 6-8 hours.
  • 2
    Remove from slow cooker and serve on Italian bread or with rolls.

  • This time of year is so hectic with school, parties, and family get togethers. Dinner at my house has become more of an afterthought when in reality it should be a priority since it is the only time we all have a chance to sit down together and interact. Even if sometimes dinnertime is somewhat of a circus act with little kids, that is what our life is right now and I wouldn't want it any other way. That's one of the reasons why I love this Italian beef roast. Not only is it a new twist on the ordinary roast, but it literally takes less than five minutes to prepare and leaves me more time to enjoy my family. It's packed with flavor and I could hardly stop myself from eating it all. I threw this in the slow cooker in the morning, and after soccer, karate, and violin lessons all I had to do was open some freshly baked rolls that I had bought at my bakery. This meal is comfort food at its best and instead of fussing in the kitchen, I can talk to my son about his new girlfriend. Who, by the way, told him she had to break up with him because he didn't make enough money. My son is five years old. Dang, women are demanding these days.
