Ingredients

jar (6 oz.) marinated quartered artichoke hearts, drained

jar (6 oz.) whole mushrooms, drained

Italian plum tomatoes, cut into small wedges

small cucumber, halved lengthwise, seeded and sliced

cup olive oil

tablespoons red wine vinegar

Directions

  • 1 In large bowl, combine all ingredients except oil and vinegar; toss to mix.
  • 2 Drizzle salad with oil and vinegar; toss gently to coat.
Tips  

Use 1/4 cup of your favorite Italian salad dressing instead of the olive oil and red wine vinegar for a slightly different flavor.
