    Ingredients

    • 1 1/2 cups all-purpose flour
    • 1/2 cup whole wheat flour
    • 3 teaspoons baking powder
    • 1/2 teaspoon salt
    • 1/2 cup white sugar (less if desired)
    • 1  egg, beaten
    • 3/4 cup milk
    • 1/4 cup vegetable oil
    • 1 cup any flavor fruit jam
    • 1/8 cup chopped walnuts (optional)

    Directions

    1. 1Preheat oven to 375 degrees F (205 degrees C)
    2. 2In a large bowl stir together: flour, baking powder, salt, sugar and walnuts. Make a well in the center. -- In a small bowl: beat egg, milk, oil, and jam together.
    3. 3Pour entire contents of wet ingredients into the well of the flour mixture. Mix quickly and lightly until moistened, do not beat. The batter will be lumpy.
    4. 4Scoop batter into a lightly greased muffin pan, filling each well 3/4 full. Bake at 375 degrees for 25 minutes until golden or until a toothpick tester come out clean.
    5. 5SIDE NOTE: --You can use 2 cups of all-purpose flour if you dont have whole wheat flour. --Depending on the sweetness of your jam you may want to adjust the amount of sugar accordingly.

    These muffins are so soft and sweet, thank you for the recipe!! I used strawberry preserves, so there were chunks of cooked strawberries in the mix, which made them even better.
