Ingredients

  • 3  boneless, skinless chicken breast halves (about 4 ounces each), cut into 1-inch
  • cubes
  • 4- ounce piece smoked sausage, cut into 1/4-inch slices
  • 1  cup spaghetti sauce
  • 1 1/2  to 2 teaspoons Creole or Cajun seasoning
  • 2  large tomatoes, chopped (2 cups)
  • 1  large onion, chopped (1 cup)
  • 2  medium stalks celery, chopped (1 cup)
  • 1  can (14 1/2 ounces) ready-to-serve chicken broth
  • 1  cup uncooked regular long grain rice

Directions

  1. 1. Mix all ingredients except rice in 3 1/2- to 4-quart Crock-Pot slow cooker.

  2. 2. Cover and cook on low heat setting 6 to 7 hours.

  3. 3. Stir in rice. Cover and cook on low heat setting 30 to 45 minutes longer or until rice is tender.
