Japanese Rice Balls (Onigiri)

This is basically the PB&J of Japan and a great way to use up sushi rice. If you're packing these for lunch, wrap them in plastic wrap to keep them from drying out.

    Ingredients

    • 4 cups cooked calrose (sushi) rice
    • 2 sheets nori seaweed OR 6 nori snack strips (e.g., teriyaki flavor)
    • Possible fillings:
    • umeboshi
    • chopped pickles
    • miso

    Directions

    1. 1Scoop a ball with wet hands and form a little pocket in the middle to stuff in your choice of fillings.
    2. 2Cap the filling with more rice, form into a rounded triangle or ball and slap a little strip of nori on to keep your hands from getting messy when grabbing one. You can also wrap the balls completely, or just use one strip.

    When I want to deviate from the vegetarian version, I like to use a little leftover salmon or tuna mixed with chopped scallions and soy sauce. Scrambled egg with mirin is another good one. Anything goes with onigiri!
