Jerk Chicken

Jerk is a complex blend of seasonings that originated in the Caribbean as a method of preserving meat. The ready-made marinade provides a simple way of flavoring the chicken.

Ingredients

  • 4  boneless skinless chicken breast halves
  • 4  boneless skinless chicken thighs
  • 1  (5 to 6-oz.) bottle jerk marinade

Directions

  1. GRILL DIRECTIONS: Heat grill. Place chicken in resealable plastic bag or shallow dish. Pour marinade over chicken. Let stand 15 minutes at room temperature to marinate, turning occasionally.

  2. When ready to grill, remove chicken from marinade; reserve marinade. Place chicken on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium coals. Cook 6 minutes.

  3. Turn chicken; brush with reserved marinade. Cook an additional 5 to 8 minutes or until chicken is no longer pink in center. Discard any remaining marinade.

  4. Remove chicken from grill. Wrap 2 chicken breast halves and 2 thighs in foil; store in refrigerator for later use. Serve remaining chicken.
