Ingredients

  • 1/3 pound ground beef
  • salt and pepper
  • 24 wonton wrappers
  • 1 3/4 cups grated Parmesan cheese (7 oz)
  • 1 3/4 cups shredded mozzarella cheese (7 oz)
  • 3/4 cup ricotta cheese (3 oz)
  • 1 cup pasta sauce
  • (optional) basil for garnish

Directions

  1. 1Preheat oven to 375 degrees. Spray muffin tin with cooking spray.
  2. 2Brown beef, and season with salt and pepper. Drain.
  3. 3Cut wonton wrappers into circle shapes (about 2 1/4- inches) using a biscuit cutter or using the top of a drinking glass. You can cut several at a time. Note: For a more rustic look, no cutting necessary!
  4. 4Reserve 3/4 cup Parmesan cheese and 3/4 cup mozzarella cheese for the top of your cupcakes. Start layering your lasagna cupcakes. Begin with a wonton wrapper and press it into the bottom of each muffin tin. Sprinkle a little Parmesan cheese, ricotta cheese, and mozzarella cheese in each. Top with a little meat and pasta sauce.
  5. 5Repeat layers again (i.e. wonton, Parmesan, ricotta, mozzarella, and pasta sauce). Top with reserved Parmesan and mozzarella cheeses.
  6. 6Bake for 18-20 minutes or until edges are brown. Remove from oven and let cool for 5 minutes. To remove, use a knife to loosen the edges then pop each lasagna out.
  7. 7Garnish with basil and serve.

I made these tonight for my kids and they loved it! i did put my own spin on it though, i used chicken ground meat in my sauce and i ALWAYS add salsa to my tomato sauce to chunk it up and it really adds zing to the dish. i used a square wonton for the bottom layer to make more of a basket effect so the filling wouldnt fall out after i took it out from the tin. and i used a round one for the top layer for presentation and so the square edges that were exposed wouldn't turn hard and crispy. it was perfect. also i did spray olive oil on the top layer wonton, it looked and felt too dry as i was layering it prior to baking. i was a bit of an 'eager beaver' though ... after it was done baking i attempted to remove one cupcake right away. it was soggy and the shape totally wilted. i left the others cooling for 5-10 min as was suggested. it was absolutely perfect to remove after that. no sogginess at all. firm and kept shape. definitely will make this again and again

Forgot to add in my last post, I first had troubles with the ricotta and getting an even layer down on top of the parmesan. I found that taking a soup spoon full of the ricotta and sort of flattening it out almost like a disc as if playing with play dough or clay is a great way to get even coverage. I absolutely love this recipe!! The family hasn't stopped bugging me to make more since before Christmas!!

I too had trouble finding wonton wraps but egg roll wrappers are the same thing, just larger. Work fine. Much healthier portion size than oversized squares we usually cut for individual serving. OMG! These were so good and SUCH a hit at my bosses b-day potluck!! Pretty much trippled everything to make 3 or 4 trays! Didn't change to much, mixed ground beef with Itl sausage and combined ricotta and cottage cheese together. And FINALLY found wonton wrappers and a local Asian Store, but was told you could find them in produce section of grocery! Will be making these for all my lil get togethers!! :)

they are super yummy. I think they are the cutest when you leave the wonton wrapers square. Besides my hubby likes the crispy points. I forgot to get some sause so I used pettite diced tomatoes with garlic and basil that I had on had and seasoned my meat a little more.

I haven't ever baked them after freezing. Since they are small, I would think you would only add on an extra 5-10 minutes to baking time but like I said, I haven't tried it. You bake them at 375 degrees.

I love the lightness of the wonton dough. The size is perfect for controlling portions. It is another way to prevent 4 - 10 year olds from getting more sauce upon themselves than inside their tummies. Great idea to make a large number in advance, then freezing them. When you need a fast tasty serving, take them out and put back into muffin pan to bake. **I am curious - what oven temperature do you use? How much longer do you bake them, when cooking from frozen?** Thanks.

Someone may have said this already, but it's easier to start with Ricotta cheese first, then add the mozzarella > Parm > beef > Sauce >repeat. Other than that tip they are freaking amazing!!! Oh I also season the beef with just more than salt and pepper. We use Goya Adoba. Sazon Goya.

The wonton skins are a stroke of genus! I tried it a few days ago, they turned out beautifully. My family loved them and the leftovers reheated nicely in the microwave. OMGoodness!!!!! These are absolutely amazing!! Tried them out on my boys first, substituted breakfast sausage for the beef, and they couldn't get enough of them! Made them for an office potluck and my entire tray of 35 - GONE!!!!

i've made these twice now and they're AWESOME! i don't cut the wonton wrappers at all and it gives them a nice little crisp. i don't have a 6 cup pan, so i double up the amount of wrappers and use my 12 cup pan, but between my husband and i there's only about 4 left for lunch the next day! thanks for the idea, because i'm making them again tonight!

I really can't think of a more appropriate word for this whole experience apart from "delicious". I found the wonton wrappers easy to work wih, but tasted suspiciously like wonton wrappers (hum... go figure...). If I make it again, I'd prefer to use the same technique, but with boiled lasagne noodles instead. However, if I'm gonna bother with that, might as well just make a real lasagne. That said, they are fun. It would be cool to have the ingredients out and let the kids do their own layers.

Made these for dinner and kids and hubby loved it! Did not cut wonton wrappers into circles and they made a yummy crust. Decided to make some up and then freeze them so the kids could throw one in the microwave for an afterschool snack.

So Yummy! I made these tonight. Everyone loved them! I used meat sauce instead of browning up meat and I browned up some mushrooms and onions. I combined the ricotta with parm cheese, garlic and parsley. I didn't bother cutting the wontons, it just made a couple of crispy edges (which we love). I love how east this is to personalize. I think I will use this as a dinner party recipe and let everyone make their own lasagna cup.

Loved these! My girls loved helping mommy make them and the wonton wrappers make this dish so nice and light. Where lasagna can sometimes be heavy because the noodle is so dense, this one is light and flavorful. A definite must for our weekly menu!

I can hardly wait to try these. I love that the cooking time is so much shorter, not to mention the nice presentation they make. I think they would be great for bulk cooking and freezing, such as once-a-month cooking. You could line the muffin tins with plastic wrap, fill the wells, then place the muffin tin in the freezer until the 'cupcakes' are frozen. Then remove the mini-lasagnas from the pan and pop them into freezer bags. You could take out however many you want when you're ready to bake them, put them back into the prepared muffin tin, and increase the bake time!
