    Ingredients

    • 1 cup marinara sauce
    • 3/4 pound ground beef
    • 12 wonton wrappers
    • 8 ounces shredded mozzarella
    • 3 ounces Parmesan cheese
    • 4 ounces Ricotta cheese
    • (optional) basil for garnish

    Directions

    1. 1Preheat oven to 375 degrees. Spray muffin tin with cooking spray.
    2. 2Brown beef and season with salt and pepper. Drain.
    3. 3Cut wonton wrappers into circle shapes using a biscuit cutter or using the top of a drinking glass. You can cut several at a time. Note: For a more rustic look, no cutting necessary!
    4. 4Reserve 6 tablespoons Parmesan cheese and 6 tablespoon mozzarella for the top of you cupcakes. Start layering your lasagna cupcakes. Begin with a wonton wrapper and press it into the bottom of each muffin tin. Sprinkle a little Parmesan cheese, Ricotta cheese, and mozzarella cheese. Top with a little meat and marinara sauce. Use around 1-2 teaspoons of all the ingredients depending on your personal preference.
    5. 5Repeat layers ending with marinara sauce. Top with reserved Parmesan and mozzarella cheese.
    6. 6Bake for 18-20 minutes or until edges are brown. Remove from oven and let cool for 5 minutes. To remove use a knife to loosen the edges then pop each lasagna out.
    7. 7Garnish with basil and serve.

    Someone may have said this already, but it's easier to start with Ricotta cheese first, then add the mozzarella > Parm > beef > Sauce >repeat. Other than that tip they are freaking amazing!!! Oh I also season the beef with just more than salt and pepper. We use Goya Adoba. Sazon Goya.

    My family and I love lasagna. I had been looking for a way to make single serving lasagna without having to bake individual mini lasagnas in their own little glass baking dish. The wonton skins are a stroke of genus! I tried it a few days ago, they turned out beautifully. My family loved them and the leftovers reheated nicely in the microwave. Thanks for this innovative idea, I will definately be making these again and again :D

    OMGoodness!!!!! These are absolutely amazing!! Tried them out on my boys first, substituted breakfast sausage for the beef, and they couldn't get enough of them!
    Made them for an office potluck and my entire tray of 35 - GONE!!!!

    i've made these twice now and they're AWESOME! i don't cut the wonton wrappers at all and it gives them a nice little crisp. i don't have a 6 cup pan, so i double up the amount of wrappers and use my 12 cup pan, but between my husband and i there's only about 4 left for lunch the next day! thanks for the idea, because i'm making them again tonight!

We decided to top them with small covers using the wonton wrapper dough (we had to make the dough ourselves because we couldn't find wonton wrappers in the supermarket; the dough took like 2 hours to make because we're both inexperienced). We also put a bit of cheese on top of the covers. The cover idea was a total success! It helped keep everything in place and it was crunchy, cheesy and ...delicious! I really can't think of a more appropriate word for this whole experience apart from "delicious".

    They were ok. The small portion size makes them good for kids and would be fun to serve at a party. I found the wonton wrappers easy to work wih, but tasted suspiciously like wonton wrappers (hum... go figure...). If I make it again, I'd prefer to use the same technique, but with boiled lasagne noodles instead. However, if I'm gonna bother with that, might as well just make a real lasagne. That said, they are fun. It would be cool to have the ingredients out and let the kids do their own layers.

    Made these for dinner and kids and hubby loved it! Did not cut wonton wrappers into circles and they made a yummy crust. Decided to make some up and then freeze them so the kids could throw one in the microwave for an afterschool snack.

    So Yummy! I made these tonight. Everyone loved them! I used meat sauce instead of browning up meat and I browned up some mushrooms and onions. I combined the ricotta with parm cheese, garlic and parsley. I didn't bother cutting the wontons, it just made a couple of crispy edges (which we love). I love how east this is to personalize. I think I will use this as a dinner party recipe and let everyone make their own lasagna cup.

    Loved these! My girls loved helping mommy make them and the wonton wrappers make this dish so nice and light. Where lasagna can sometimes be heavy because the noodle is so dense, this one is light and flavorful. A definite must for our weekly menu!

    I can hardly wait to try these. I love that the cooking time is so much shorter, not to mention the nice presentation they make. I think they would be great for bulk cooking and freezing, such as once-a-month cooking. You could line the muffin tins with plastic wrap, fill the wells, then place the muffin tin in the freezer until the 'cupcakes' are frozen. Then remove the mini-lasagnas from the pan and pop them into freezer bags. You could take out however many you want when you're ready to bake them, put them back into the prepared muffin tin, and increase the bake time!
