Zip up chicken salad with a three-ingredient dressing and tropical twist of mango.

Ingredients

Dressing

container (6 oz) piña colada low-fat yogurt

to 2 tablespoons fresh lime juice

teaspoon Caribbean jerk seasoning (dry)

Salad

cups shredded romaine lettuce

cups cubed cooked chicken

can (15 oz) black beans, drained, rinsed

cup chopped seeded plum (Roma) tomatoes (2 to 3 medium)

Directions

  • 1 In small bowl, mix dressing ingredients until well blended.
  • 2 In 3- or 4-quart clear glass serving bowl, layer salad ingredients except almonds in order listed. Spoon dressing evenly over salad; sprinkle with almonds.
