Looking for a quick Mexican-style salad recipe? Then check out this cheesy greens and chicken layered salad that's ready in just 10 minutes!

Ingredients

3/4
cup chunky-style salsa
1
teaspoon sugar
3
teaspoons chili powder
1
bag (10 oz) mixed salad greens (8 cups loosely packed)
1
cup diced cooked chicken
1
container (8 oz) fat-free sour cream
1
cup shredded reduced-fat Cheddar cheese (4 oz)
2
tablespoons sliced ripe olives (from 3.8 oz can), drained
1
cup broken baked tortilla chips

Directions

  • 1 In small bowl, mix salsa, sugar and chili powder.
  • 2 In 13x9-inch (3-quart) glass baking dish, arrange salad greens. Top with chicken. Spoon salsa mixture evenly over chicken. Top with spoonfuls of sour cream. Sprinkle with cheese, olives and chips. Serve immediately.
Tips

"I try to get my kids to help out wherever they can. This is one they can easily help with --they can help layer, open cans and packages, and toss the finished salad." Lisa
