Lazy Chicken

A healthy one pot dish with summer vegetables and chicken. Serve this right from the pan...it's lazy chicken after all.

Ingredients

pound chicken breasts, cut into one-inch cubes

red potatoes, sliced thinly

small white onion, thinly sliced
1
small zucchini, thinly sliced into disks
1
-2 teaspoons steak seasoning
1/2
cup chicken broth
1
(14.5 ounce) can Muir Glen™ organic fire roasted crushed or diced tomatoes

basil leaves, coarsely chopped
1
teaspoon dried oregano
1/2
cup shredded mozzarella
Salt and pepper

Directions

  • 1 In an oven safe skillet, sprinkle chicken with salt and pepper and brown on medium high heat for a couple of minutes. Remove the chicken from the pan and set aside.
  • 2 Add olive oil to the pan. Layer the sliced potatoes and onions in the pan and sprinkle with half of the steak seasoning. Cook potatoes and onions in a thin layer until brown, turning as little as possible to get a nice sear.
  • 3 Add chicken broth to the pan. Spread zucchini in a thin layer on top of the potatoes and onion. Sprinkle zucchini with the remaining steak seasoning.
  • 4 Place chicken in an even layer over the zucchini. Pour tomatoes evenly over the chicken. Sprinkle tomatoes with the oregano and basil. Cover and cook until the veggies and chicken are completely done.
  • 5 Sprinkle with cheese and place under the broiler until cheese melts or starts to brown. You could also just cover the pan with a lid on the stove to melt the cheese.
  • 6 Serve right away.

What could be easier than a one-pot dinner recipe?


As the lazy days of summer grow long so does my to-do list of laundry and chores. The household responsibilities have taken a back seat to cooling off in the pool and impromptu backyard picnics. By the time dinner rolls around, the last thing I want to do is slave in the kitchen.

Lazy can sometimes be considered a negative term, but I just like to think it’s being efficient with your energy. This Lazy Chicken is a one-pot healthy dish with layers of fresh summer vegetables and seasonings.

And just because it’s called Lazy Chicken, don’t expect it to lack flavor. Although, it’s sometimes hard to find healthy dishes that still appeal to the whole family, this one will have your family eating their veggies without complaint.

Let’s face it -- sometimes healthy cooking requires a lot of time and preparation. Now don’t get me wrong, you still have to chop a few veggies here and there, but this Lazy Chicken is cooked in one pot, which means less cleanup in the end and more time to relax in the summer sunset.

The key is to slice the veggies thin and layer them in the pot in even layers so that the veggies cook quickly.
