What could be easier than a one-pot dinner recipe?
As the lazy days of summer grow long so does my to-do list of laundry and chores. The household responsibilities have taken a back seat to cooling off in the pool and impromptu backyard picnics. By the time dinner rolls around, the last thing I want to do is slave in the kitchen.
Lazy can sometimes be considered a negative term, but I just like to think it’s being efficient with your energy. This Lazy Chicken
is a one-pot healthy dish with layers of fresh summer vegetables and seasonings.
And just because it’s called Lazy Chicken, don’t expect it to lack flavor. Although, it’s sometimes hard to find healthy dishes that still appeal to the whole family, this one will have your family eating their veggies without complaint.
Let’s face it -- sometimes healthy cooking requires a lot of time and preparation. Now don’t get me wrong, you still have to chop a few veggies here and there, but this Lazy Chicken is cooked in one pot, which means less cleanup in the end and more time to relax in the summer sunset.
The key is to slice the veggies thin and layer them in the pot in even layers so that the veggies cook quickly.
No need to transfer it to a fancy serving dish -- just serve it right from the pan on the table … this is Lazy
Chicken after all!
