Ingredients

  • 3  large leeks, sliced
  • 1/2  cup water
  • 1/2  teaspoon white wine vinegar
  • 2  cans (19 oz each) Progresso® butter beans, undrained
  • 2  cans (14 oz each) chicken broth
  • 2  tablespoons chopped fresh parsley
  • 1/2  teaspoon pepper
  • 1/2  teaspoon lemon juice

Directions

  1. In 3-quart saucepan, cook leeks in water and vinegar over medium-high heat about 5 minutes or until soft. Add beans and chicken broth; reduce heat to low. Cook uncovered 10 minutes.

  2. Reserve 1 cup soup. Pour remaining soup in blender or food processor. Cover and blend on high speed until smooth. Return to saucepan. Stir in reserved soup, parsley, pepper and lemon juice. Cook uncovered about 5 minutes or until hot.
