This is a great recipe to use up any leftover cheeses you have in your fridge. You can use any cheese, cheddar to brie to goat cheese and you don't need to use the exact amount of cheese. 4 Items


Tablespoons Butter
Cups Flour
Teaspoon Nutmeg
Teaspoon Cayenne Pepper
Cups Milk
cups (approximately) any leftover cheese you have in your fridge, shred hard cheese, cube soft cheese
pound penne pasta (or any left over pasta you have)
Cup Breadcrumbs


  • 1 Preheat oven to 400º. Start boiling a pot of salted water
  • 2 Mix all cheeses in a bowl and set aside
  • 3 Melt 4 tablespoons butter in large saucepan over medium heat
  • 4 Add flour and stir until mixture turns golden brown
  • 5 Add nutmeg and cayenne pepper
  • 6 Gradually whisk in milk. Simmer until thickened and smooth, stirring often
  • 7 Add cheeses from large bowl. Stir until melted and smooth.
  • 8 Melt 1 tablespoon butter in heavy large skillet over medium-high heat. Add breadcrumbs; toss. Stir until golden, set aside
  • 9 Cook pasta in boiling salted water until tender but firm to bite. Drain. Transfer to large bowl.
  • 10 Pour cheese sauce over; toss. Divide among individual custard cups (or one big casserole dish).
  • 11 Sprinkle with the breadcrumb mixture
  • 12 Place cups on a baking sheet.
  • 13 Bake pasta until beginning to bubble and tops are golden, about 20 minutes
