tablespoon butter or margarine

tablespoon olive oil

Directions

  • 1 Beat egg with fork in shallow dish until smooth and slightly foamy. Mix bread crumbs, marjoram, salt, lemon peel and pepper in another shallow dish. Dip sole fillets into beaten egg; coat with bread crumb mixture, turning to coat both sides. Set aside.
  • 2 Heat butter and oil in 10- to 12-inch skillet over medium-high heat just until butter melts. Add fillets; cook 3 to 4 minutes, turning once, until light golden brown and fish flakes easily with fork.
  • 3 Serve immediately with lemon wedges.
