    Ingredients

    • 1 lb tilapia
    • 1  lemon, juiced and zested
    • 1 tbsp olive oil
    • 1 clove garlic, minced
    • 1 tsp capers
    • salt and pepper, to taste

    Directions

    1. 1Preheat the oven to 375 degrees. Spray a baking dish with olive oil.
    2. 2Rinse the tilapia under cool water and place in the prepared baking dish.
    3. 3Whisk together the lemon juice, olive oil, garlic and capers. Pour over the tilapia. Season with salt and pepper.
    4. 4Slide the baking dish into the oven and bake for 15-20 minutes, until the fish flakes easily with a fork.
    5. 5Serve immediately, spooning the liquid from the pan over the fish and topping with lemon zest.
