Ingredients

Salad

cup finely chopped red onion

large tomato, diced

medium cucumber, peeled if desired, halved lengthwise and sliced

(15-oz.) can garbanzo beans drained, rinsed

Dressing

teaspoons chopped fresh oregano or 1 teaspoon dried oregano leaves

tablespoon chopped fresh parsley or 1 teaspoon dried parsley flakes

teaspoon grated lemon peel

teaspoon salt

teaspoon pepper

teaspoons lemon juice

tablespoon extra-virgin olive oil

Directions

  • 1 In medium bowl, combine all salad ingredients.
  • 2 In small bowl or jar with tight-fitting lid, combine all dressing ingredients; stir or shake until well combined. Pour dressing over salad; toss well.
Tips  

Other mild-flavored beans like Great Northern, pinto or black-eyed peas can substitute equally well in this crunchy salad.
