    Ingredients

    • 3 Cups White All-Purpose Flour
    • 1/2 Cup Unsalted Butter
    • 1/2 Cup Vegetable Shortening
    • 1/2 Cup White Sugar
    • 1/2 Cup Powdered Confectioner's Sugar
    • 1 1/2 Tsp. Vanilla Extract
    • 1 Tsp. Coconut Extract or Flavoring
    • 1/2 Tsp. Baking Soda
    • 1/2 Tsp. Cream of Tartar

    Directions

    1. 1Cream together the butter, shortening, powdered sugar, and regular sugar until it is light and fluffy.
    2. 2Add the coconut and vanilla extracts and mix thoroughly.
    3. 3Finally, add the dry ingredients and beat on low speed until a dough is formed. The dough should not be too sticky, if it is, add a tablespoon or more of flour until it is shapeable with your hands, without sticking to everything.
    4. 4Separate the dough into five separate pieces and place them in different bowls. Using these food dies: red, yellow, green, blue, and purple die each ball of dough and knead until the colors are thoroughly incorporated into the dough.
    5. 5Set the bowls of individual dough in the refrigerator for 5 minutes to slightly harden. Then, preheat your oven to 375 degrees (F).
    6. 6On a floured surface, roll out each colored dough ball one on top of the other about 1/8" thick. Follow this pattern: purple on the bottom, blue, green, yellow, and red on the top or mix it up to your fancy. Do not roll out each dough separately, you want each layer to be "stuck" to the bottom layer to prevent flaking or separating.
    7. 7Gently roll up your dough vertically (or hot dog style) until you have a long rope of dough. Using a sharp knife, slice 1/4" thick pieces off of the dough log and try not to smash them.
    8. 8Line your cookies about 2" apart on a greased cookie sheet and bake for 10 to 12 minutes, being careful to not let them brown so the colors remain vivid.
    9. 9Let the cookies cool for about 10 minutes. Enjoy!
