Enjoy this light fettuccine alfredo sprinkled with parsley that’s ready in 30 minutes – perfect for dinner.

Ingredients

oz. uncooked fettuccine
1/3
cup margarine or butter
1 1/2
teaspoons all-purpose flour
1/4
teaspoon white or black pepper
1/8
to 1/4 teaspoon nutmeg, if desired

cup half-and-half

oz. (1/2 cup) shredded fresh Parmesan cheese

tablespoon chopped fresh parsley, if desired

Directions

  • 1 Cook fettuccine to desired doneness as directed on package. Drain; cover to keep warm.
  • 2 Meanwhile, melt margarine in large skillet over low heat. Stir in flour, pepper and nutmeg. Gradually stir in half-and-half. Cook over low heat for 5 minutes or until mixture thickens slightly, stirring frequently.
  • 3 Stir in cheese; cook just until cheese is melted, stirring constantly. Immediately stir in cooked fettuccine; toss to coat with sauce. Sprinkle with parsley.
Tips  

Using half-and-half instead of heavy cream in this favorite pasta dish reduces the fat somewhat without sacrificing the rich, creamy sauce. The touch of nutmeg deepens the flavor without being readily recognizable as a sweet spice.
