Like a lot of cooks, you probably tweak recipes slightly to suit your family's tastes and diets. A little extra spice here... sub low-fat sour cream there...
When you create your own version of a Tablespoon.com recipe, you're doing the same thing. The only difference? You're recording your changes.
So next time you want to make that chicken parmesan everybody loved so much, you'll be able to view exactly what you changed. Plus, you can share your recipe so others can try it too.

Saute yellow, red or a bunch of green onions in butter or Smart Balance. Pour all including butter, in large casserole or 9X13" pan. If you use all the ingredients you may need two pans!
Cover this layer with cooked drained meat of your choice. Then the chopped or sliced vegetables. (I like bacon, with Wwiss and spinach, or ham, asparagus and cheddar and jack, zucchini with sausage and pepper jack.) Lots of possibilities!
In large mixer, beat the egg and egg substitute until fluffy. Add cottage cheese and beat again to mix well. Add optional soy flour, then salt, baking powder, parsley and thyme. Blend well. Add half the cheese or combination of cheeses you are using.
Pour over the vegetable layer in casserole. Top with mushrooms or sliced red peppers. Then sprinkle with Parmesan cheese.
Bake at 400 degrees for 15 minutes then at 350 degrees for about 40 minutes. Stick a knife in it to make sure the eggs are not "wet". It will brown beautifully. Wait a few minutes before cutting and eating.
You can serve it with salsa and sour cream if you wish but it is not necessary.
If you have a small family, this is great to take to a potluck.
