Luscious Lemon Pecan Bread

This bread is easy to make. The addition of fresh lemon zest to the batter and fresh lemon juice to the glaze makes it taste super fresh -- even in the middle of winter! Great gift bread.

    Ingredients

    • 1 cup butter, softened
    • 2 cups sugar
    • 4 large eggs
    • 1/2 tsp salt
    • 1/2 tsp baking soda
    • 1 cup milk (or buttermilk, if desired)
    • 3 cups flour
    • zest (grated rind) of 1 lemon
    • 1 cup chopped pecans
    • GLAZE:
    • 1 cup granulated sugar
    • Juice of 3 lemons

    Directions

    1. 1Preheat oven to 350 degrees. Coat 2 loaf pans with non-stick cooking spray.
    2. 2Cream butter and sugar well. Add eggs one at a time, beating after each. Sift dry ingredients together and add alternately with milk. Blend well.
    3. 3Fold in lemon zest and nuts. Pour into prepared loaf pans. Bake at 350 for 50-55 minutes. Bread is done when toothpick inserted in center comes out clean.
    4. 4While bread bakes, mix glaze ingredients. Let stand and stir often. When bread is done, cool 5 minutes in pan, then remove bread from pans and place on a cooling rack. While bread is still warm, pour glaze mixture over top. Let cool completely before slicing.
