This bread is easy to make. The addition of fresh lemon zest to the batter and fresh lemon juice to the glaze makes it taste super fresh -- even in the middle of winter! Great gift bread.

Ingredients

  • 1 cup butter, softened
  • 2 cups sugar
  • 4 large eggs
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 cup milk (or buttermilk, if desired)
  • 3 cups flour
  • zest (grated rind) of 1 lemon
  • 1 cup chopped pecans

GLAZE:

  • 1 cup granulated sugar
  • Juice of 3 lemons

Steps

  • 1
Preheat oven to 350° F. Coat 2 loaf pans with non-stick cooking spray.
  • 2
Cream butter and sugar well. Add eggs one at a time, beating after each. Sift dry ingredients together and add alternately with milk. Blend well.
  • 3
Fold in lemon zest and nuts. Pour into prepared loaf pans. Bake at 350° F for 50-55 minutes. Bread is done when toothpick inserted in center comes out clean.
  • 4
While bread bakes, mix glaze ingredients. Let stand and stir often. When bread is done, cool 5 minutes in pan, then remove bread from pans and place on a cooling rack. While bread is still warm, pour glaze mixture over top. Let cool completely before slicing.
