    Ingredients

    • 1 1/2 Cups Cornmeal
    • 1  Large Yellow Plantain
    • 8 Oz Queso Fresco
    • 1/2 Cup Brown Sugar
    • 1/2 Cup Hot Water

    Directions

    1. 1Crumble the cheese into small pieces.
    2. 2Peel and boil the plantain for 10 minutes until tender.
    3. 3Place the ingredients into the food processor and pulse until combined.
    4. 4Knead into a dough.
    5. 5Bring oil to 350 degrees F.
    6. 6Roll dough into logs and bring together at ends to form a ribbon bow shape.
    7. 7Fry mandocas at 350 degrees F for about 5 minutes until browned.
