Maple syrup provides a delicious addition to these sweet potato cups that are topped with meringue. An easy side dish ready in 25 minutes.

Ingredients

2
packages (24 oz each) refrigerated mashed sweet potatoes
1/3 cup butter, softened
1/3 cup packed light brown sugar
1/3 cup real maple syrup
3
teaspoons grated orange peel
1
teaspoon salt
4
egg whites
1/2 cup granulated sugar

Directions

  • 1 Heat oven to 400°F. Microwave sweet potatoes as directed on package. In large bowl, stir sweet potatoes, butter, brown sugar, syrup, orange peel and salt.
  • 2 Spoon mixture into 8 (6-oz) custard cups or individual baking dishes (ramekins). Place on 15x10x1-inch pan. In small bowl, beat egg whites with electric mixer on high speed until foamy. Add granulated sugar, 1 tablespoon at a time, beating until stiff peaks form and sugar is dissolved. Spread meringue over sweet potato mixture.
  • 3 Bake 5 minutes or until golden brown.
Tips

Instead of making meringue, you can top the sweet potatoes with mini marshmallows and broil until lightly browned.
