Martini-Inspired Panini

All the flavors of a classic cocktail, but in a sandwich form!

Ingredients

  • 1 can (11 oz) refrigerated Pillsbury™ Original French Bread
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons mayonnaise
  • 2 teaspoons vodka
  • 1 teaspoon fresh lemon zest
  • 4 or 5 thick slices pancetta, cut into thirds
  • 1 cup arugula
  • 10 olives, for garnish

Steps

    Preheat oven to 350°F. Arrange the bread dough seam-side down on a greased baking sheet. Bake for 23 to 28 minutes, or until golden brown. Slice bread into 1/2 inch slices, on the diagonal.

    In a small bowl, whisk together the mayo, vodka and lemon zest.

    Lightly brush one side of each bread slice with olive oil. Place the bread (oil side down) on a preheated indoor grill or panini maker, and layer with arugula, pancetta and a good drizzle of the vodka mayo. Place the other slice of bread on top, oil side up. Repeat as many times as you can to fit the sandwiches on the grill. Place another cast iron on top of the sandwiches (or lower the top of the panini maker) and grill for 3 minutes on each side. Or use a panini press!

    Garnish with olive-speared toothpicks and serve immediately.
