Meatloaf Cupcakes

Meatloaf doesn't have to be meh! Make it into cupcakes and wow your peeps with some seriously fun food tonight.

Ingredients

1 1/4
pounds ground beef
1
clove garlic
1
red bell pepper, very finely diced
1/3
cup parsley
2
eggs
1/2
cup bread crumbs
Salt and pepper to taste

box (10 ounce) Betty Crocker™ Ultimate Cheddar mashed potatoes
1 1/3
cup water, boiling
2
tablespoons butter, melted
2/3
cup milk
1/4
cup bacon bits

Directions

  • 1 In a large bowl, mix together ground beef, garlic, red bell pepper, parsley, eggs, and breadcrumbs. Season with salt and pepper to taste.
  • 2 Preheat oven to 400°F.
  • 3 Roll meat mixture into 8 balls. Press into a muffin tin sprayed with nonstick baking spray. Bake for 18-23 minutes or until cooked through. Allow to cool slightly, then transfer to a serving platter.
  • 4 In a second large bowl, mix together potato flakes, boiling water, butter, 1/3 cup of milk, and one packet of cheddar sauce. Scoop into a large zip-top bag, snip a corner from the bag, and pipe mashed potatoes over meatloaf.
  • 5 In a small, microwave-safe bowl, heat together cheddar packet and milk until hot. Whisk together until smooth sauce forms. Drizzle sauce over mashed potatoes on top of each cupcake. Sprinkle with bacon bits, parsley, and pepper if desired. Serve and enjoy.

My mama’s meatloaf made me cry and complain.


But THIS meatloaf recipe is yummy scrummy. It's good in the 'hood. It's cute as a button. It's a slew of other clichés, and worth getting two forks in your hands, because…it's that scrumptious and gorgeous. Double threat, Betty. DOUB.LE.THREAT.

 

Ingredients for Meatloaf Cupcakes

So here's how you start it out: A bowl of colorful veggies, a bowl of meat, Progresso breadcrumbs, and two eggs.

 

Mashing together the meatloaf base

Mix and mash it all together to make a perfectly seasoned meat-tastic meatloaf base.

 

Meatloaf balls in muffin tin

Then roll that meat into a ball and place it into a muffin tin. Give those tins a once-over with baking spray before putting the meat into the muffin tins.

 

Cooked mini meatloaves

Bake the meat and pop it into the oven until cooked through. While cooking the mini meatloaves, mix together the mashed potatoes.

 

Betty Crocker Ultimate Cheddar Mashed Potatoes

For this, you'll want a 2-packet box of Betty Crocker Ultimate Cheddar Mashed Potatoes.

 

Mixing together potatoes

Mix together them potaters. You'll need both cheddar packets, but mix just one into the mashed potatoes. Save the second packet for making the cheese sauce.
