My mama’s meatloaf made me cry and complain.
But THIS meatloaf recipe is yummy scrummy. It's good in the 'hood. It's cute as a button. It's a slew of other clichés, and worth getting two forks in your hands, because…it's that scrumptious and gorgeous. Double threat, Betty. DOUB.LE.THREAT.
So here's how you start it out: A bowl of colorful veggies, a bowl of meat, Progresso breadcrumbs, and two eggs.
Mix and mash it all together to make a perfectly seasoned meat-tastic meatloaf base.
Then roll that meat into a ball and place it into a muffin tin. Give those tins a once-over with baking spray before putting the meat into the muffin tins.
Bake the meat and pop it into the oven until cooked through. While cooking the mini meatloaves, mix together the mashed potatoes.
For this, you'll want a 2-packet box of Betty Crocker Ultimate Cheddar Mashed Potatoes.
Mix together them potaters. You'll need both cheddar packets, but mix just one into the mashed potatoes. Save the second packet for making the cheese sauce.
Drizzle with cheese sauce, top with bacon bits and parsley. And just like that…dinner is done! You're ready to serve up these fundorable little meatloaves in just about 30 minutes.
