    Ingredients

    • 1 pound ground beef
    • 1 (1 lb 12 ounce) can Muir Glen Fire Roasted Tomatoes
    • 1 (1 ounce) packet Old El Paso Taco Seasoning Mix
    • 1 (8-3/4 ounce) can whole kernel corn
    • 1 (15 ounce) can black beans
    • 1 (4 ounce) can diced green chilis
    • 16 ounces sour cream, divided
    • 2 cups cooked white rice
    • 1 1/2 cups sharp cheddar cheese
    • 1/4 cup sliced black olives
    • 1/4 teaspoon dried cilantro flakes

    Directions

    1. 1Cook ground beef in a skillet over medium heat until browned. Add fire roasted tomatoes and Old El Paso Taco Seasoning Mix. Set aside.
    2. 2In a large bowl, combine the corn, black beans, green chilis, 1-1/2 cups of sour cream, and rice.
    3. 3Spread half of the rice mixture into the bottom of a greased 9x13" baking dish. Spoon half of the tomato mixture on top, then spread a second layer of rice, and a second layer of the tomato mixture on top of the rice mixture. Top with cheese and olives. Bake in preheated oven for 20-30 minutes, or until cheese is bubbly.
    4. 4Cool slightly before serving. Serve with a dollop of sour cream and a sprinkling of cilantro flakes, if desired.
