Ingredients

Waffles

cups Original Bisquick™ mix
1
package (1 oz) Old El Paso™ taco seasoning mix
1 1/3
cups milk

tablespoons vegetable oil

Taco Filling

4
frozen brown-and-serve sausage patties (from 6.4-oz package)
4
eggs
2
tablespoons milk
1/2
teaspoon salt
1/4
cup Old El Paso™ chopped green chiles (from 4.5-oz can)
1/2
cup shredded Cheddar cheese (2 oz)
1/4
cup Old El Paso™ Thick 'n Chunky salsa

Directions

  • 1 Heat waffle maker. (Waffle makers without a nonstick coating may need to be brushed with vegetable oil or sprayed with cooking spray before batter for each waffle is added.)
  • 2 In large bowl, mix waffle ingredients just until blended. Pour slightly less than 3/4 cup batter onto center of hot waffle maker. (Check manufacturer's directions for recommended amount of batter.) Close lid of waffle maker. Bake about 5 minutes or until steaming stops. Carefully remove waffle. Repeat with remaining batter.
  • 3 Meanwhile, heat sausage patties as directed on package. Cover to keep warm.
  • 4 Heat 12-inch nonstick skillet over medium heat. In medium bowl, beat 4 eggs, 2 tablespoons milk and the salt with whisk. Pour half of egg mixture into hot skillet. Gently rotate skillet to spread egg mixture evenly over bottom. Cook 1 to 2 minutes or just until eggs begin to set up around edges. Sprinkle 2 tablespoons of the green chiles over eggs. Carefully roll up, using pancake turner and letting egg mixture set up as you roll. Transfer omelet to warm plate; cover to keep warm. Repeat with remaining egg mixture and green chiles.
  • 5 Cut each omelet roll-up in half; cut each sausage patty in half. To serve, place 1 omelet roll-up half and 2 sausage patty halves in center of each of 4 waffles. Top each with 2 tablespoons cheese and 1 tablespoon salsa. Freeze any remaining waffles for future use.
Tips  

For a super-speedy breakfast, store extra waffles in the freezer. Simply toast for a few minutes, add eggs, sausage and toppings...and breakfast is ready in no time at all!
