Middle Eastern meets Mexican in this mini version of chickpea patties--great for meatless Mondays!

Ingredients

can (15.5 oz) chickpeas, drained, rinsed
1
cup plus 1 tablespoon lightly packed fresh cilantro

tablespoons chopped green onions
1
tablespoon plus 1 teaspoon Old El Paso™ taco seasoning mix (from 1-oz package)

tablespoons vegetable oil
1
avocado, halved, pitted and peeled
1/2
cup plain Greek yogurt
2
teaspoons fresh lime juice
1/2
teaspoon salt

Old El Paso™ Taco Boats™ mini soft flour tortillas
Make it FRESH toppings, as desired (see below)

Directions

  • 1 Heat oven to 400°F. Line cookie sheet with foil; spray with cooking spray.
  • 2 In food processor, add chickpeas, 1 cup of the cilantro, the green onions and 1 tablespoon of the taco seasoning mix. Process mixture until almost smooth and begins to pull away from sides, 1 to 2 minutes, stopping to stir occasionally. Shape chickpea mixture into 24 (1-inch) balls. Place on cookie sheet. In small bowl, mix oil and 1 teaspoon taco seasoning mix. Brush on each ball. Bake 12 to 15 minutes or until set and bottoms are golden brown.
  • 3 Meanwhile, wash out food processor. Add avocado, remaining cilantro, yogurt, lime juice and salt; process until smooth, 1 to 2 minutes. Refrigerate until ready to serve.
  • 4 Heat boats as directed on package. Fill each warmed boat with 2 falafel balls and avocado sauce. Serve with Make it FRESH toppings.
Tips  

Make it FRESH toppings: sliced radishes, shredded lettuce, queso fresco

Falafels are a traditional Middle Eastern food served with pita bread.
