    Ingredients

    • 6 large tortillas
    • 1 lb ground beef
    • 1 packet taco seasoning
    • 1/3 medium onion, diced
    • 1 can enchilada sauce
    • 1 can refried beans
    • 1 1/2 cup cheddar or mexican blend cheese
    • 3  small or medium tomatoes, diced
    • Cilantro
    • Black olives
    • Sour cream
    • Shredded lettuce

    Directions

    1. 1Cook onions and beef in skillet, when done, drain off grease and stir in taco seasoning, set aside
    2. 2Using 1 or 2 rectangular baking pans (depending on size), layer the following:
    3. 3Cover bottom of pan(s) with a thin coat of enchilada sauce
    4. 4Cut tortillas into halves, lay in baking pan with straight edges on outside eges of pan
    5. 5Use another tortilla to fill in gaps to create a solid tortilla layer
    6. 6Spread a layer of refried beans on top of tortilla
    7. 7Pour another layer of enchilada sauce on top of beans
    8. 8Scoop in a layer of beef and onions
    9. 9Shred cheese on top of meat layer
    10. 10Add in tomatoes and some chopped cilantro and sliced black olives if desired
    11. 11Create another tortilla layer
    12. 12Layer beans, enchilada sauce, meat and onions, cheese, and veggies again
    13. 13Create a top tortilla layer and spread a coating of enchilada sauce and cheese
    14. 14Bake lasagna at 350 degrees for 30 - 45 minutes until cheese is melted and tortillas start to crisp
    15. 15Serve with cold sour cream, lettuce and extra veggies

    for a new twist for my son's girl friend eats 80o/o some type mexican variety.now I can add to her BD dinner a new treat. July 7 will be a real surprise to her.thank you Tablespoons.you diffidently are the best recipe find for me,thought being diabetic couldn't have a lot of my favorite foods,new ingredients make that no longer can't have pizza.yeah,

    This is how my sister and I make enchiladas casserole, we also put bell peppers in with the onion and beef at the beginning, and add jalapenos at the end. Amazing.
