More About This Recipe

  • Fans of my website know I am obsessed with the combination of bacon, pineapple, and jalapeno.

I have done it to near death over there, but have never brought a recipe to Tablespoon until now.

These mini bacon pineapple jalapeno flatbreads are an awesome game-time snack, a classy appetizer for a party, or a delicious late night treat.

I sliced this pineapple on a deli slicer to get it nice and thin. You could do this with a knife to get similar results, but if you have access to a deli slicer, why not?

Roll out some store bought pizza dough very thin and cut it into rounds slightly bigger than your pineapple slices.

Place the flatbreads on a lightly greased baking sheet and top with the pineapple, some bacon, jalapeno, and a little cheese. Bake at 500 F for about 7 minutes or until the dough has cooked and is starting to brown around the edges.

My friends loved eating these on a lazy afternoon watching some preseason football games.

Most of us ate them like a pizza, but one of my friends folded his up and ate it like a taco.
