Mini Marshmallow Cream Cakes in Jars

Rich chocolate cakes baked in small jars are filled and topped with marshmallow cream frosting.

Ingredients

Cake:

Betty Crocker™ devil's food cake mix

large eggs
1 1/4
cups water
1/2
cup vegetable oil

ounces melted semi-sweet chocolate

Marshmallow Cream Frosting:

cup shortening

cups powdered sugar
1
(13 oz.) tub marshmallow fluff

teaspoon pure vanilla extract

cup heavy whipping cream

Directions

  • 1 Cake: Preheat oven to 350ºF. Spray 16 half-pint jars with cooking spray. Line a high-rimmed baking pan with a kitchen towel and arrange the jars on top. Bring a pot of water to a boil.
  • 2 Make cake mix according to package instructions. Stir in melted chocolate. Equally divide batter among jars. Set baking sheet on middle rack in oven. Pour hot water into baking sheet, close the door, and bake cakes for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  • 3 Remove cakes from water bath and allow to cool completely. Trim off the domed part of each cake. Remove a core from the center of each cake.
  • 4 Marshmallow Cream Frosting: Beat shortening and powdered sugar until light and fluffy. Add marshmallow fluff and vanilla extract and beat to combine. Add heavy whipping cream and beat until fluffy.
  • 5 Spoon frosting into a pastry bag fitted with a large star tip. Pipe frosting into the center and on top of each cake.

These rich chocolate cakes are filled with marshmallow cream frosting and served in mini glass jars with tiny spoons attached with pretty ribbons. They’re the perfect size dessert for a party or a bake sale!

The cakes are super easy to make using a Betty Crocker™ Devil's Food Cake Mix. To make the cake batter extra chocolatey, add 4 ounces of melted chocolate after you've mixed the batter according to the package instructions.

Divide the batter among 16 half-pint size jars.

Set the jars on a towel-lined baking pan, set the pan on the middle rack in the oven, and pour in some boiling water to create a water bath. Be careful you don't spill any water into the cakes! The water bath will help keep the cakes really moist.

Bake the cakes for 25-30 minutes, until a toothpick inserted in the center of a cake comes out clean. Remove the cakes from water bath and allow to cool completely. Trim off the domed tops from each cake.

Remove a core from the center of each cake using a cupcake corer or a knife.

Then, make the marshmallow cream frosting and spoon some of it into a pastry bag fitted with a large star tip.

Pipe some frosting into the center of each cake and then create a nice big swirl on top.

To dress up your mini jars, use double-sided tape to attach a cute ribbon around the top lip of the jar. Leave a small opening in the taped area so you can insert a spoon between the ribbon and the jar. Your sweet little desserts are now ready to serve.
