Easy, sweet peach cobbler, baked in a muffin tin for individual servings.

Ingredients

cup sugar
1
cup flour
2
teaspoons baking powder
1
dash salt
3/4
cup milk
4
tablespoons (1/2 stick) melted butter
2
cans (8 oz each) diced peaches
Cinnamon, to taste
Brown sugar, to taste

Directions

  • 1 Preheat oven to 375°F. Line cups of a regular-sized muffin tin with cupcake liners. Add 1 teaspoon melted butter to the bottom of each liner.
  • 2 Combine sugar, flour, baking powder, salt and milk by hand. Put 2 tablespoons of batter inside each cupcake liner, on top of the melted butter.
  • 3 Add 1 tablespoon diced peaches on top of the batter in each tin. Sprinkle with brown sugar and cinnamon.
  • 4 Bake for 20 minutes. Allow mini peach cobblers to cool almost completely before removing from the pan.
