Rainbows with an ice cream surprise inside!

Ingredients

  • 1 pint mint chocolate chip ice cream
  • 1 (7 oz.) jar marshmallow crème
  • Red, orange, yellow, green & blue sugar sprinkles
  • 12 mini shortbread tartlets

Steps

    Using a mini cookie scooper, make 12 small balls of mint chocolate chip ice cream and place them onto a parchment or wax paper-lined cookie sheet.

    Place the cookie sheet into the freezer for 30 minutes to set.
  • 3
    After the ice cream is hardened, take a ball out, one at a time, and quickly frost it with the marshmallow crème.

    Carefully sprinkle each color of sugar onto the marshmallow crème, covering the ice cream ball so it looks like a rainbow. Return to freezer to set.

    Place rainbow ice cream into mini tartlet shell.

    What could be better than a sweet treat that looks like a rainbow?

    One that’s filled with ice cream!

    And not just any flavor of ice cream, mind you. For St. Patrick’s Day, these mini rainbow bites are filled with MINT CHOCOLATE CHIP ice cream, which just happens to be my all-time fave.

    It’s my kryptonite.

    These tiny treats are absolutely perfect for your St. Patrick’s Day celebration and are adorably mini – leprechaun size, if you will. Everyone will sure feel lucky when they dig into them and find the minty green ice cream – such a sweet surprise!

    So grab some mint chocolate chip ice cream, marshmallow crème and sugar sprinkles and let’s make some mini rainbows!

    Use your mini cookie scoop to make cute little balls of ice cream and plop them onto your cookie sheet. Don’t forget to line it with parchment or wax paper. Then stick them in the freezer to firm up again.

    Take out one ball at a time and make sure it’s frozen solid. If it’s a little mushy, stick it back in the freezer because this next step takes time and you don’t want rainbow puddles. Frost the whole thing with marshmallow crème. Mmmmm...

    Now the fun part! Sprinkle the different color sugars on to the ice cream to resemble a rainbow. I know: It’s lookin’ pretty cute, right?

    For extra cuteness, pop it into a mini tart shell.

    There you have it.
