Mini Taco Pies

Yummy layers of your favorite taco fillings baked on top of a Bisquick™ base to make little taco pies.


cup diced white onion
pound ground beef
(1.25 ounce) package of Old El Paso™ taco seasoning mix
cups Original Bisquick™ mix
cup water
(15 ounce) can black beans, drained
cups shredded cheddar cheese

sour optional toppings:

cream, diced tomatoes, cilantro, onion, salsa


  • 1 Preheat the oven to 375°F. Spray 12 muffin cups with cooking spray.
  • 2 Brown beef in a skillet and drain the fat. Add the taco seasoning mix and water called for on the package and simmer for 4-5 minutes. Set aside.
  • 3 In a medium bowl mix the Bisquick™ and water until blended. The mixture will be thick and the texture of pizza dough. Press 1-2 tablespoons of dough in the bottom of each muffin tin and press slightly up the sides.
  • 4 Spoon about 1-2 tablespoons of taco meat over the top of each dough filled tin. Next spoon about 1-2 teaspoons of black beans over the taco meat in each of the muffin tins.
  • 5 Bake for 6-8 minutes and remove from the oven. Distribute the 2 cups of cheese over all 12 muffin tins evenly and put back in the oven to bake for 1-2 minutes or until cheese is melted.
  • 6 Remove pies from tin and top with your favorite taco toppings (i.e. sour cream, diced tomatoes, onion, cilantro, and salsa).

I always do my grocery shopping on Mondays. I actually do my laundry AND grocery shopping on Mondays, which now that I think of it could be why I dread Mondays so much.

Since I’m always trying to hold out on going to the store until Monday, Sunday night dinners around here get pretty creative. Sometimes my creativity leads to an amazing dish and sometimes it’s just downright awful.

I really wanted to make these Taco Cupcakes but I didn’t have any wonton wrappers on hand. I stared into my cupboard and saw some Bisquick mix and thought it would be a perfect crust for what would eventually turn into these Mini Taco Pies.

Just mix a little Bisquick with water until you have the consistency of pizza dough and press it into the bottom and sides of your muffin tins.

The beauty of these is that you can really layer anything you want here depending on what you have lying around. You definitely want to start with taco meat for your classic taco flavor but from there you have a blank canvas to build whatever you want.

I luckily found some black beans in my pantry but you could even add some refried beans or crushed tortilla strips here.

Melt some cheese on top because cheese makes everything taste better. Once the pies have baked, everyone can get involved.
