Enjoy these warm miniature cherry pecan scones that are baked in the oven and have them ready in just 25 minutes.

Ingredients

cups all-purpose flour
1
tablespoon sugar
3
teaspoons baking powder
3/4
to 1 cup skim milk
2
tablespoons oil
2
tablespoons finely chopped maraschino cherries, well drained on paper towel
2
tablespoons finely chopped pecans

Directions

  • 1 Heat oven to 450°F. In medium bowl, combine flour, sugar and baking powder; blend well. Add 3/4 cup milk and oil; stir just until dry ingredients are moistened, adding additional milk, 1 tablespoon at a time, if necessary to form a soft dough. Stir in cherries and pecans.
  • 2 On generously floured surface with floured hands, knead dough 15 to 20 times. Pat into 1-inch-thick round; cut with floured 1 1/2-inch round cutter.* Place scones on ungreased cookie sheet.
  • 3 Bake at 450°F. for 8 to 9 minutes or until light golden brown. Serve warm.
Tips  

* If desired, pat dough into 1-inch-thick 5x4-inch rectangle; cut into 20 squares.
