Homemade whipped cream, folded into softened mint chocolate chip ice cream, gives this dessert simultaneous rich flavor and light texture.

Ingredients

Torte

1 1/2
cups chocolate wafer cookie crumbs (24 cookies)
1/4
cup margarine or butter, melted
1
quart (4 cups) mint chocolate chip ice cream, softened*
1
cup whipping cream, whipped

Sauce

3
tablespoons margarine or butter
1/3
cup unsweetened cocoa
1
cup powdered sugar
1/2
cup lite evaporated skimmed milk
1/2
teaspoon mint extract

Directions

  • 1 In medium bowl, combine cookie crumbs and 1/4 cup margarine; mix well. Reserve 1/4 cup crumbs for topping. Press remaining crumbs in bottom and 1/2 inch up sides of ungreased 9-inch springform pan. Freeze 1 hour.
  • 2 Place ice cream in large bowl; gently fold in whipped cream. Spoon mixture into crust-lined pan. Sprinkle with reserved crumbs. Cover with foil; freeze 5 hours or overnight until firm.
  • 3 Melt 3 tablespoons margarine in small saucepan over medium heat. Remove from heat. Stir in cocoa; blend well. Gradually stir in powdered sugar and milk. Return to heat; cook until powdered sugar is dissolved and sauce boils and thickens, stirring constantly. Stir in extract. Serve warm sauce over torte.
Tips  

* If mint chocolate chip ice cream is unavailable, use chocolate chip ice cream and fold 1/4 teaspoon mint extract into whipped cream before folding it into ice cream.
