    Ingredients

    • CROUTONS
    • 5  oz. French bread, cut into 1/2-inch slices and cubed (about 6 cups)
    • Olive oil nonstick cooking spray, if desired
    • DRESSING
    • 2/3  cup reduced-calorie mayonnaise
    • 1/3  cup skim milk
    • 1/4  cup Dijon mustard
    • 2  tablespoons extra-virgin olive oil
    • 2  tablespoons cider vinegar
    • 3/4  teaspoon salt
    • SALAD
    • 2  (12-oz.) pkg. American-style mixed salad greens
    • 1/3  cup chopped onion
    • 1  pint (2 cups) cherry tomatoes, cut into wedges, or 1 red bell pepper, thinly sliced

    Directions

    1. 1Heat oven to 325°F. Spread bread cubes in single layer on ungreased cookie sheet. Spray cubes with nonstick cooking spray. Bake at 325°F. for 15 minutes. Set aside to cool.
    2. 2Meanwhile, in small bowl, combine all dressing ingredients; beat with wire whisk until well blended. Cover; refrigerate until serving time.
    3. 3In large salad bowl, combine all salad ingredients. At serving time, add dressing to salad; toss gently to coat evenly. Add croutons; toss to mix.
