    Ingredients

    • 2  teaspoons olive oil
    • 1  medium onion, chopped
    • 1  (15 or 19-oz.) can chick peas or (15-oz.) can garbanzo beans, drained, rinsed
    • 1  (15-oz.) can cut sweet potatoes in syrup, drained
    • 1/2  cup coarsely chopped dates
    • 1/2  teaspoon turmeric
    • 1/4  teaspoon cinnamon
    • 1  cup vegetable broth
    • 1  tablespoon honey
    • 2  tablespoons chopped shelled pistachios, if desired

    Directions

    1. 1Heat oil in medium saucepan over medium heat until hot. Add onion; cook 3 to 5 minutes or until tender, stirring frequently.
    2. 2Add all remaining ingredients except pistachios; mix well. Bring to a boil. Reduce heat; simmer 10 minutes or until thoroughly heated, stirring occasionally. Sprinkle each serving with pistachios.
